Serves approximately 10
Ingredients
2 bags of frozen cheese tortellini (I use Monas Pasta Cafe brand, each bag is 19 oz.)
2-4 oz. containers of crumbled Feta cheese (8 oz. total)
1 pint Grape tomatoes
3 stalks of green onions
1/2 cup of Italian or Zesty Italian salad dressing (plus, more to taste)
Method
1. Cook tortellini according to directions until al dente. Drain. Run cold water over pasta until cool.
2. Chop green onions only using green stem. Cut Grape tomatoes half or thirds.
3. Add pasta, chopped green onions, sliced Grape tomatoes in bowl and stir until all components are mixed. Add dressing to coat, serve immediately. Add extra dressing if needed for personal preference.
If refrigerate left-overs the pasta will absorb the dressing so you will need additional dressing to moisten pasta before serving.
This looks so good! I love feta cheese and I'll have to try it out for sure.
