If you're needing a simple and easy dessert, I have one for you. This grasshopper crepe recipe may have a unique name but don't worry, it is not made with grasshoppers. Although, my son would probably think that would be wicked cool. The crepe shells are wrapped around mint chocolate chip ice cream then gently drizzled with chocolate sauce. This recipe was inspired by one of my favorite restaurants where I always enjoy one of their grasshopper crepes for dessert. The perfect way to end a delightful dinner.
This concept can be altered to fit your personal tastes. I like a variety of ice cream and have served this with strawberry ice cream inside the crepe shells, drizzled with chocolate sauce, strawberry sauce and with fresh strawberries as a garnish. However you serve it, your guests are sure to enjoy.
What You'll Need:
Crepe Shells - These can be found in the produce section of most grocery stores.
Mint Chocolate Chip Ice Cream - Any brand or your favorite ice cream to use as a filling.
Chocolate Sauce - I just used Hershey's Chocolate Syrup. I do have a sinful chocolate sauce recipe that I could have used but Hershey's works just fine. I will include the sinful chocolate recipe in the future.
First, take scoops of ice cream and put in the middle of your crepe shells. I used 3 large scoops.
Second, wrap the crepe shells burrito style.
Then, stick in the freezer until ready to serve. Best to have in freezer for at least 2 hours before serving.
To serve, I cut the crepes in half, then drizzle with chocolate.
The super easy strawberry sauce I have been known to use is just this easy...
I bag of sliced strawberries, thawed. Place in blender and add 1-2 packets of Splenda (depending on your personal sweetness level). Blend until pureed. Chill then drizzle like above chocolate sauce. YUM.
